According to marketing experts, small businesses benefit from sharing more personal stories. I sometimes struggle with that because I’m in work mode most of the time. But one thing I love talking about? Cooking!


Cooking in our home comes in waves. My husband and I will cook every meal for a year or two, then get burnt out and switch to meal delivery services like Thistle and locally prepared chef-cooked meals. But when I do cook, I have some go-to family recipes that always get requests from friends and family.


These are simple, healthy, and delicious dishes that work for busy weeknights, relaxed weekends, and special occasions (like Thanksgiving!).

These gluten-free, naturally sweet banana pancakes are a staple in our house. They’re quick to make, require minimal ingredients, and don’t need syrup (though they pair beautifully with a simple fruit compote).


Ingredients:

• 3 ripe bananas

• 3 eggs

• A pinch of salt

• Cinnamon

• A dash of baking soda


Instructions:


1. Blend all the ingredients until smooth (add the baking soda at the end).

2. Heat a pan over medium heat, add a little ghee or butter, and cook for exactly 3 minutes and 33 seconds per side (yes, that oddly specific time works best!).

3. Serve with warm applesauce or a quick blueberry compote (just heat frozen blueberries until they burst).

2. Oven-Baked Mustard Chicken Thighs– Crispy and Flavorful


This is my go-to chicken recipe for busy weeknights. It’s juicy, crispy, and packed with flavor—plus, it pairs perfectly with rice and roasted veggies.


Ingredients:

• 2 lbs bone-in, skin-on chicken thighs

• Salt and pepper

• Olive oil or melted duck fat

• 2-3 tbsp mustard

• 1 tbsp honey

• Garlic powder

• Red pepper flakes (optional)


Instructions:


1. Preheat the oven to 425°F.

2. Mix all the ingredients together and rub them over both sides of the chicken thighs.

3. Place the chicken on a baking sheet, skin-side up, and bake for 35 minutes.

3. Roasted Broccolini– A Simple Yet Fancy Side Dish


This easy roasted broccolini recipe adds brightness and crunch to any meal. The caramelized lemon and garlic give it an elegant touch.


Ingredients:

• 3-4 bunches of broccolini

• 1 lemon (zest and juice)

• Maple syrup

• Olive oil

• ½ head of garlic, thinly sliced

• Salt


Instructions:

1. Preheat the oven to 425°F.

2. Toss the broccolini with olive oil, lemon zest, lemon juice, maple syrup, and salt.

3. Spread onto a parchment-lined baking sheet and sprinkle with sliced garlic.

4. Roasted Carrots– Sweet, Savory, and Packed with Flavor


Carrots don’t get enough love! This roasted carrot recipe is slightly sweet, earthy, and packed with aromatic spices.


Ingredients:

• 2-3 bunches of carrots, sliced in half lengthwise

• Honey

• Olive oil

• Coriander (whole and ground)

• ½ head of garlic, thinly sliced

• Thyme

• Salt and pepper


Instructions:

1. Preheat the oven to 425°F.

2. Toss the carrots with olive oil and spread them on a parchment-lined baking sheet.

3. Drizzle with honey, sprinkle with coriander and thyme, and finish with garlic slices, salt, and pepper.

4. Roast for 30-35 minutes until golden and tender.

5. Thanksgiving Mashed Sweet Potatoes with Crunchy Pecans


If you need a show-stopping Thanksgiving side dish, look no further. These mashed sweet potatoes are rich, creamy, and topped with toasty pecans for the perfect contrast.


Filling:

• 2-3 lbs purple sweet potatoes, peeled and cubed

• 4 oz butter

• 2 tsp vanilla extract

• ½ cup whole milk

• 1 tsp salt

• 2 eggs


Topping:

• 8 oz crushed pecans

• ½ cup brown sugar

• 4 oz butter

• 1 tsp salt

• A splash of cream


Instructions:

1. Boil the sweet potatoes for 20-30 minutes, then drain.

2. Preheat the oven to 350°F.

3. Blend the filling ingredients until silky smooth, then spread into a 9x13” baking dish.

4. Melt the butter, sugar, and cream together, then mix in the pecans and salt.

5. Spread over the sweet potatoes and bake for 35-40 minutes, until the pecans are golden brown.
